The Dallas-Fort Worth area of Texas will host the third consecutive annual celebration of Chittagong’s traditional Mezbani feast on October 31. With approximately 5,000 guests expected, organizers recently held a special food-tasting event to assess the flavor and quality of the traditional dishes ahead of the main event. Members of the Chittagong community living in Texas sampled the food and shared their feedback on its taste, seasoning and overall quality.
The tasting event was held at Spice of Richardson, a restaurant in Richardson, Texas, where traditional Chittagong-style Mezbani beef was served. Representatives from different generations of the local Chittagong community attended the event. In addition to tasting the beef, participants discussed the balance of spices, heat and salt, as well as the overall cooking quality. While some found the familiar taste of traditional Chittagong Mezbani in the dishes, others offered suggestions for further improvement.
Mezbani has long been an integral part of Chittagong’s history, culture and social traditions. Historically, large-scale Mezbani feasts were organized by zamindars and wealthy families, who often brought experienced cooks from distant places to prepare the meals. Their distinctive spice blends, cooking techniques and years of experience gave their dishes a unique identity. Over time, Mezbani has evolved into a cherished tradition that represents hospitality, social harmony and cultural heritage among people from all walks of life in Chittagong.
In an effort to preserve this tradition abroad, members of the Chittagong community have been organizing large-scale Mezbani events in Texas for several years. Preparing food for thousands of guests while maintaining the authentic taste of traditional Chittagong-style Mezbani presents a significant challenge. To address this, organizers arranged the tasting session before the main event, allowing participants to sample the food prepared by the cooks and provide direct feedback.
According to the organizers, preferences for Mezbani dishes can vary from person to person. Cooking styles and the use of spices also differ somewhat across different parts of Chittagong. Therefore, the purpose of the tasting session was not to make a final judgment on any particular cook’s performance, but to gather a range of opinions and suggestions to improve the quality of the food for the main event.
Beyond showcasing traditional cuisine, Mezbani celebrations abroad offer an opportunity to introduce younger generations to Chittagong’s cultural heritage, hospitality and tradition of social solidarity. Such events also help strengthen connections and foster goodwill among members of the expatriate Chittagong community.
The tasting session was facilitated by event organizers Ador Chowdhury and Abdullah Khokon, along with Adnan, a well-known cook in Texas. Members of the local Chittagong community from different age groups participated enthusiastically.
The event concluded with a special prayer. Organizers then invited everyone to attend the main Mezbani celebration on October 31, formally bringing the tasting session to a close.
